What is Food Defense ?
Food Defense is a term created by the USDA (Department of Agriculture) and later by the FDA (United States Department of Food and Drug Administration), used to refer to the set of rules and measures for the protection of food and products for human consumption against deliberate contamination.
Special attention should be paid to the protection of:
- Exterior and interior security of the plant.
- Processing areas, laboratories where chemical substances and reagents are handled.
- Warehouses. Silos and storage facilities.
- Reception area, mail handling, staff/visitor/subcontractor access .
- Loading and unloading area.
- Service areas (water, gas, electricity, refrigeration systems, etc.)
- Waste disposal areas where potentially hazardous materials are deposited.

To do this, the analysis of hazards and the assessment of associated risks must be carried out, taking into account the production, packaging, preservation, transport and storage process in relation to the risk of introducing contaminating substances and elements, according to the food defense code or guidelines.
This analysis must be carried out annually (or whenever there is a change that affects food safety) and according to the identification of conditions that pose a risk of adulteration.
